Stir Fried Spinach

STIR FRIED SPINACH

Serves 2

Spinach:
8 oz. fresh spinach
1 tablespoon garlic, chopped
1/4 teaspoon sugar
salt for taste
2 teaspoons peanut oil

Sauce:
2 teaspoon soy sauce
1/2 teaspoon rice vinegar

Remove any brown leaves of spinach, rinse under running water until completely clean. Blanch the vegetable in a wok with boiling water for about 1 minute or until dark green. Heat a wok to medium at medium high heat with oil. Stir in garlic briefly until aromatic. Add spinach back to wok with garlic, mix in soy sauce and rive vinegar, stir them around. Combine together the sugar and salt, whisk around until sugar is completely dissolved. Turn off heat, remove stir fried spinach with garlic.
