Grilled Shrimp and Island Rice

Seasoned, grilled shrimp skewers on citrus island rice with pineapple. Served with seasonal vegetables

Applebee's Copycat Recipe

Shrimp Marinade:
4 whole lemons, juice only
16 shrimp peeled & deveined
4 whole limes, juice only
1 teaspoon salt
1 teaspoon ground pepper
2 tablespoons cider vinegar
1/2 cup olive oil

Combine all the marinade ingredients into a resealable plastic bag. Add shrimp. Marinate in the refrigerator for at least 2 hours. Save the lemons and lime to add to to the rice. Place the shrimp on skewers (if they are wooden you need to soak them in water so they don't burn) Cook the shrimp until done. You can use a George Foreman grill and it only takes a few minutes.  Watch them closely so they don't burn.

Island Rice:
Add 1 cup of rice
Add 2 cups of liquid.

You can use lemon juice, lime juice or the juice from the pineapple can. Make sure to dilute it with water to make 2 full cups of liquid. You may also add the lemon and lime rinds for added flavor. Cover the baking dish with aluminum foil and bake in the oven at 350 degrees for 1 hour. Your rice will come out perfectly every time. For this dish you can also grill pineapple and seasonal vegetables on skewers.
