GRILLED CHICKEN CAESAR SALAD
Applebee's Copycat Recipe
Makes 2 large dinner salads
1/2 cup Real mayonnaise
3 tablespoons white vinegar
3 tablespoons Parmesan cheese, grated
2 boneless skinless chicken breasts
1 Dole Caesar Salad Kit
Make the Salad Dressing: Thin the mayonnaise with the vinegar in a small bowl with a lid. Stir in the black pepper and grated cheese. Refrigerate until ready to serve or you can use the dressing in the kit.
Grill the Chicken: Heat a George Foreman Grill. Cook the chicken until done.Let the meat rest for a few minutes to let the juices set.
Prepare the Salad: The Dole Salad kit comes with lettuce, parmesan cheese and garlic croutons. Divide the contents of the kit on two large plates. Slice the chicken breasts into thin slices and place on top of the salad.
Serve with dressing on the side.
Notes: Applebee’s has had several versions of the Caesar salad on the menu. They have added garlic shrimp, Italian chicken, grilled salmon and steak to the classic salad to create a wonderfully hearty dinner. Add your favorite spice rub to the meat of your choice, grill and place on top of the salad to create a restaurant quality salad in no time at all.
