CHICKEN QUESADILLA GRANDE
Applebee's Restaurant Copycat Recipe
1 tablespoon shortening
2 (12-inch) flour tortillas
2 tablespoons chipotle sauce (optional)
1/2 cup grilled chicken (spicy seasoning optional)
3/4 cup Queso Filling
Jack and Cheddar cheeses
jalapeno pepper, diced
bacon, fried and crumbled
1 cup shredded lettuce
Stuff the Tortillas
Brush one side of each tortilla with shortening. Place one tortilla, shortening side down on work surface. Spread chipotle sauce evenly on one tortilla. Microwave the chicken for about 45 seconds, then distribute on top of sauce on the tortilla. Evenly distribute the queso filling on top of chicken. Cover with the other tortilla, shortening side up.
Fry the Tortillas
Brown on griddle or in non stick skillet evenly on both sides until the queso filling is thoroughly melted.
Add the Garnish
Use shredded lettuce, sour cream, green onion and salsa as accompaniments.
